The Truth About Going Grainless

There is so much conflicting nutritional information from the “experts” about whether or not grains and carbs are good for you. Some say the high fiber grains will help fill your stomach for longer so you don’t snack as much and still others say grains and carbs can make you feel groggy or you can develop an intolerance to them.

This week on my Cravings Coach podcast I interviewed Vanessa Smith, a registered dietitian and life coach, to talk about her own experiences eating grains and also living without grains. She shares her food allergies, her health symptoms that made her feel like she was having an emotional breakdown, and the steps she took to get control of her health and her life.

Living without grains and processed carbs in your diet is up to you and you should carefully weigh how you feel when you eat them and how you feel when you don’t. Vanessa is certainly an inspiration and a testament that it IS possible to gain control of your life and your diet.

Happy Birthday Diana Walker at 61

Well – I am 61 years “old”

I can’t believe it!  Above is a photo of me with one of my sisters, Roselyn Phare, taken last week.

I’m amazed too!  I feel and think AGELESS….. I feel maybe age 45 at the most, in biological years.  I’ve worked hard, though, this is not coincidence!

Many of my friends are in their 30s and 40s.  Many friends who are in their 50s or more are Sunriders and they look younger every year!

Thanks, Rob, when you said today:  you’re not 61 Diana, get out! 

I appreciated that!  You have worked so much on yourself, and you are an inspiration, so it was great to hear that from you!! 

I work very hard at staying healthy.    I eat well and exercise, meditate/pray, walk, do yoga, swim, keep my stress levels down, keep a balance in my life, engage in businesses that uplift and help other people, earn honest and abundant money, spend time with family and friends. 

For me, if I wasn’t eating the Sunrider Whole Foods daily, these other healthy habits would not be possible – I wouldn’t have the energy to exercise like I do, I would still be stressed and having hormonal and money problems,  I would still be craving sugar and coffee, and so on. 

I’m so happy to be 61, and HEALTHY and able to enjoy life.  My whole purpose in life is helping others on the path to abundance in health and wealth.

“Health isn’t everything, but everything is nothing without health” is my favorite quote.

Denise Eckstadt Healthy at 89 Years Old !

\Denise Eckstadt 89 Years Old      

Diana Walker’s Mom, Denise Eckstadt, turned 89 years “young” last week.

 

The first photo is Mom Denise Eckstadt and her best friend Mildred King, who is 94 years old!  They worked together at the Salmon Arm Hospital, Shuswap Lake General Hospital.  They have known each other for 50 years!  Mildred remembers when our Mom came to the hospital 50 years ago, before she worked at the hospital, when she gave birth to my sister Denny Caldwell…  (Denny is 50, she looks 35, doesn’t she?)

We celebrated Mom’s 89th birthday with 60 people on Sunday, and then with 20 people on Thursday.

Mom is well-known in the town of Salmon Arm, British Columbia, Canada, where she has lived for over 50 years.  She was a nurse for many years.  She also was a prolific writer, writing a column for more than 10 years, for the local newspaper.  The column was called “Grandma Writes”   She is known as “Grandma” to many people.  Also, she would knit beautiful scarves, and give them away and say — when you wear the scarf, remember this is a “Hug from Grandma”

The second photo is Diana Walker, my sister Roselyn Phare, my sister Denny Caldwell, with our Mom Denise Eckstadt seated in the front.  We celebrated Mom’s birthday with 20 people on Thursday.

My Mom had cancer (that was almost 40 years ago) and she has had congestive heart failure (hospitalized 2 weeks in 2006).  Mom also has glaucoma which has progressed to legal blindness in recent years.

Our Mom has is an incredibly positive attitude, and her mind and brain are very sharp.  She also has been very health conscious since the late 1960s when she had cancer, and had to have her breast removed. 

My Mom loves and eats daily the Sunrider Whole Foods that have been part of her nutrition every day since 1997.  Sunrider products have been a part of our daily lives for everyone in our family, for the past 12 years.

There are so many factors involved in being vibrantly healthy.  Genetics, environment, exercise, nutrition, attitude.   We know that Mom’s mother had stomach cancer and died in her 30s.  Her mother’s mother (our great-great-grandmother) had bowel cancer and died young.   We as a family all do our best to eat healthy, get lots of exercise, drink lots of water, keep positive, and all the other good things that are important for a healthy lifestyle.  

We want our Mom with us for many, many years to come!  And we are grateful every day for the blessings we have in our life.

2008 Hawaii Sunrider Leadership Conference

How exciting – I have been working towards this wonderful Sunrider Conference in Hawaii and fulfilling all the qualifications.  It was exciting to hear from Sunrider Canada that I qualified for this all-expense-paid trip for North American leaders, to be held in Honolulu, Hawaii.  There will be approximately 400 of us, and we have an incredible itinerary of exciting sights to see and memories to create.  The Chens (founders of Sunrider) certainly know how to reward us, above and beyond anything I have ever experienced before.

I used to live in Honolulu for 3 years in the 1970s, when I worked for and studied under Dr. Paul Bragg  That was an exciting time in my life.

Here’s a photo of me (Diana Walker), when I lived in Hawaii, and Dr. Paul Bragg was 95 and I was 28.  He was an incredible mentor, and that was the start of my knowledge of nutrition and healthy lifestyles. 

Here are just some of the highlights on the itinerary of our upcoming trip to Hawaii:

* Polynesian Cultural Center
* Luau – Private Party, dinner and show
* Pearl Harbor Tour
* Sunset Dinner Cruise
* Banquet, Dinner and Dance

How incredible this will be!  I’ll be sure to take lots of photos.  I am so grateful for having all my dreams come true, to the Chens and Sunrider, and for the privilege to be able to go back to Hawaii and share the adventure with family and friends. 

It’s been over 30 years since I lived there, and it truly was one of the most wonderful adventures of my life, and I expect this trip to be equally as wonderful.

In Loving Memory of Rhoda Eckstadt, our sister

You know how life is – full of change and full of surprises.  Our sister Rhoda Eckstadt lived from May 28, 1955 to February 17, 1977.  She was 21 when she died in Honolulu, Hawaii.

Rhoda was a loving, caring and talented young lady.  I always remember how positive she was and how she always thought of others before herself.  She was also very talented in singing and playing guitar.  She is remembered daily by myself, my sisters Roselyn Phare and Denise (Denny) Caldwell, and by our mother Denise Eckstadt.

The reason this is on my mind right now is that when Sunrider Canada told me that I had met the qualifications to attend the wonderful all-expense-paid trip for North American Sunrider Leaders to Honolulu, Hawaii – I looked at the date.

The date of the first day of the Sunrider Leadership Conference in Honolulu, is set for February 17th – which also marks exactly 31 years since my sister’s death.  I was living in Hawaii at the time, and Rhoda was visiting me.

At first, I was sad.  Then, with the help of friends and sisters, we realized that this can be turned into a time of celebration of Rhoda’s life, and a time of healing for us.  We will go on Wednesday to the area of Waikiki Beach (Ft. de Russy) where her ashes were spread all those years ago.
